Aunt April's Bakery

"Back in April, I celebrated my birthday at the Wild Cow in East Nashville and had my first great birthday cake since being diagnosed with Celiac’s and having to go gluten free. Come to find out, it’s from a local bakery called Aunt April’s Gluten Free Bakery. I recently had the privilege of trying her gluten free cookies, bread, brownies and some muffins. All I have to say is YUM!"

I can only say . . . DAMN FINE CAKE . . . and I'm a carrot cake aficionado from way back. Moist, rich and the icing is, well, the icing on the cake. Great job, April. There will be more business from this household for sure.

April!  OMG... the carrot cake is absolutely delicious.   (Seriously, I thought I died and went to heaven when I took the 1st bite... it was that good.  Did I tell you that It's been over 2 years since I've had cake?)  Steve loves it as well.  He was also amazed when he took his first bite.  :-) Thank you so much for your willingness to experiment with the recipe.  We will be in touch with you in the future for more goodies, and we will also pass your name along to others.

We LOVED your bread. It was the first real sandwiches my Son and I have had in almost three years. We even went on a Picnic! It freezes Wonderfully. There is no comparison to the store bought frozen bread. Thank you for sharing your talent.

I ate a slice of your AMAZING chocolate cake at the Wild Cow.  You blueberry muffin was unbelievable.  Your cakes and muffins are the best gluten free  products I've ever had.  I just wish I lived closer!!!

He (customers young son) said it was the best cake he has ever tasted. The kids all wanted seconds. They loved it too, and that makes a food allergy kid very happy when everyone else wants what HE is having.
